MAIN: Classic Shepherd’s Pie

Shepherd’s Pie is a classic easy family dish that you can always prepare in advance. It is traditionally made with lamb’s meat as the title ‘shepherd’ suggests. However, beef or even quorn mince can work equally as well if you prefer.

To make this tasty Shepherd’s Pie for 4 adult-sized portions, you will need the following ingredients:

1. 250g mincemeat of your choice

2. 1 medium-sized onion

3. 5 carrots, peeled and chopped

4. 1 tin of chopped tomatoes (or 1 jar of bolognese sauce)

5. 1 tbsp concentrated tomato paste

6. 1 tsp dried basil (or a handful of fresh basil leaves if you have these available)

7. A sprinkle of salt, pepper, chilli powder and garlic powder

8. 400g boiled new potatoes

9. A small bowl of cheddar cheese, grated

10. A dash of semi-skimmed milk (or milk or your choice)

11. A pinch of salt and pepper

12. 1 tbsp of butter for the mash

Step 1

Firstly, add some oil to a large frying pan and add the onion on a low heat. Simmer until they turn golden in colour then add the mince to brown it.

Meanwhile, on a separate hob, start boiling your potatoes in water and set your kitchen timer for 30 minutes.

(Peel the potatoes first if you don’t want the skins on and if you want a smoother texture to your mash).

Step 2

Once your mincemeat is turning brown, add in the carrots and the tin of chopped tomatoes and stir together.

Step 3

Next, add the basil, garlic and chilli powder as well as the concentrated tomato paste. Add the lid and allow to simmer for 30-40 minutes, stirring occasionally.

Step 4

After 40 minutes, transfer your mixture to the pie dish. Do not worry too much if your carrots are still a little firm or ‘al dente‘ as they will be cooked again in the oven too.

Drain the potatoes and mash them adding the butter, a dash of milk and some salt and pepper to taste. Then add in the grated cheese and mix together.

Add your mashed potatoes to the top of the shepherd’s pie and sprinkle any remaining grated cheese on top.

Bake in the oven at Gas Mark 4/180C/350F for 30 minutes or until golden on top.

Serve with baked beans, vegetables of your choice or even Yorkshire puddings if you wish!
