DESSERT: Classic Mini Strawberry Trifles

These delicious eight mini strawberry trifles really hit the spot and couldn’t be easier to put together! A great recipe for last minute dinner guests, children’s parties or when you are simply short on time but still want to enjoy a special dessert. Read on to find out how to make it.

To make eight mini strawberry trifles you will need the following ingredients:

1. 200g pack of Italian sponge lady fingers

2. 1 strawberry jelly sachet

3. 1 tin of custard

4. 330ml double cream

5. 75g caster sugar

6. A small milk chocolate bar to grate for decoration

7. A few fresh strawberries to decorate

*(You will also need 1 large trifle bowl or 8 mini dessert dishes).

Step 1

Place the sponge fingers into the bottom of the individual dishes. You may need to snap a few to cover the bottom of each bowl depending on the size of the bowls you are using. 

I have used eight recycled dessert pots to make mine, they are light-weight and have quite a wide base which is great for layering desserts such as trifles. 

Get your children involved in helping to make these as it’s always great to bake and cook together as a family!

Step 2

Next, make the strawberry jelly by following the instructions on the packet. Most jelly packets will require you to add hot boiling water to the powdered gelatin mixture and to stir it. Once the jelly has cooled slightly, carefully pour it into each of your dessert dishes (or large trifle bowl). 

If you have some fresh strawberries, then you could add a few pieces to each jelly pot too, to create more texture. 

Next, place the jelly pots in the fridge for at least one hour to set. Check on them within a few hours and they should be mostly set or at least set enough to move onto the next step.

Step 3

Next, add the tinned custard directly on top of each individual trifle pot with a spoon as shown above.

Step 4

Now we can make the creamy topping for our miniature trifles. I think this is my favourite part to make! In a medium-sized mixing bowl, whisk the double cream into peaks and combine in the caster sugar to taste. 

Once it is fluffy and starting to stiffen in texture, you can add it to the tops of your mini trifles. A light touch is recommended to avoid merging the custard layer with the cream.

Step 5

Grate a small amount of chocolate on top of each of the trifles or add fresh fruit as a garnish if you prefer. Voila! You have now assembled eight tasty mini strawberry trifles in no time at all. 

Now place them in the fridge to fully set and for the textures to settle. After 30 minutes to 1 hour they will be chilled enough to enjoy! (I’ve added some little colourful sprinkles to my mini trifles too).

You could also add a wide variety of toppings from crunchy chocolate balls to silver balls, to hundreds-and-thousands, the choice is yours!
