DESSERT: Mince Pie Parcels

Mince pies are synonymous with Christmas and the festive build-up to Christmas. But if you fancy a change from mince pies, then have you ever tried making Mince Pie Parcels? They are very easy to make and can offer an alternative way to jazz up the humble mince pie! I hope you like this simple five ingredient recipe.

Read on to find out how to make them.

To make nine mince pie parcels, you will need the following ingredients:

1. 6 sheets of ready to roll filo pastry

2. A jar of mincemeat (approximately 411g)

3. 1 large egg (to stick the filo pastry sheets together)

4. 1 tbsp butter

5. Icing sugar to dust

Before baking, line two baking trays with grease-proof paper (to prevent sticking) and preheat the oven to Gas Mark 4/180C/350F.

*Every two sheets of filo pastry will make three mince pie parcels.

Step 1

Firstly, stick two sheets of your filo pastry together by lightly brushing one of them with the beaten egg and then by carefully placing the second sheet on top. Lightly press down with your fingertips. 

Next, divide the sheet into three long sections by scoring along the pastry with a knife. Above, you can see one of my three long pastry sections with the mincemeat on it.

Step 2

Next, place a generous heaped teaspoon of mincemeat on the lower right-hand corner of the pastry and try to leave a slight gap at the bottom to allow for folding.

Now take the lower left-hand corner of the pastry and fold it upwards and over the mincemeat to form a triangular shape. Repeat folding the pastry over from right to left and then left to right to enclose the mincemeat. 

(Basically you are folding the whole sheet over itself in a triangular pattern). On the last fold, add a dab of butter to help seal the triangle parcel together.

Step 3

Repeat the previous step to form all nine mince pie parcels. 

Then bake them on the middle shelf of the oven at Gas Mark 4/180C/350F for 12-15 minutes or until golden in colour. 

Once they have cooled down, dust with icing sugar and enjoy!
